We went to friends of ours for a braai yesterday. There was a mutual friend of ours out from Barcelona, Sarah, with her two daughters, Sasha and Gabriella. We hadn’t seen
her in three years so it was so good catching up again.

Butternut and avocado salad

1½ large butternuts, cubed
2-3 avocados, cut into large cubes
2 tbsp coriander, chopped
2 tbsp mint, chopped
4 tbsp sweet chilli sauce
4 tbsp balsamic vinegar
1 red onion, finely chopped
2 tbsp brown sugar
Salt and pepper
Preheat the oven to 220˚C and roast the butternut until cooked. Allow to cool.
Combine dressing ingredients.Place butternut and avocado on a platter and
pour dressing over just before serving. Garnish with coriander.
