Kia’s cheese muffins

I’ve been meaning to blog about these babies for a while now. Kia made these for
us years ago, when we all lived in Wimbledon, and as fast as they came out the oven,
we were loading them up with butter, eating them and asking for more. She baked
about 3 batches that day.

They are so simple and so tasty. I made them for Louise the other day and she loved
them. You can add chopped up chives, spring onions, fresh herbs – whatever blows
your hair back. I didn’t have anything in the house the day Loo came to visit – so they
were plain but equally as good.

Kia’s cheese muffins

Makes 12 small muffins

1 cup plain flour
1 cup extra mature cheddar, grated
1 cup milk
1 tsp baking powder
1 pinch of salt
1 pinch of cayenne pepper

Add the flour, cheddar, milk, baking powder and salt in to a bowl. Mix until you
have a glue like consistency. Put a tablespoon of the mixture into each muffin hole.
Sprinkle a bit of cayenne pepper on to each and put in a preheated oven (180˚C)
for ±10 minutes.

Don’t be shy with the butter once they come out the oven. Eat straight away!
