The best scone recipe

Trust me, this is the ONLY scone recipe to go by. I went to go visit Nat on Saturday
and these had just come out the oven. We wolffed down two in a row over a gam
of Scrabble. We had some delicious homemade jam from Mark’s mom and clotted
cream. Dang, they were good!

can’t remember who’s recipe this is – found it in the Sunday Times mag ages ago

Makes 10

100g butter (room temp)
500g self raising flour
1tsp baking powder
1 pinch of sea salt (crushed)
40g caster sugar
300ml whole milk
Clotted cream
Jam of choice

 

Heat oven to 220˚C
 and butter baking sheet
.

Sift flour and 1 tsp baking powder into bowl. Add cubes of butter to flour
and make into breadcrumb consistency with your hands. Add salt, then
add the sugar. Slowly add the milk and stir.

Knead and roll out on to floured surface to 2.5cm thick. Make sure it’s
this thick, otherwise they come out looking like biscuits.

Cut squares or circles for your scones and brush with milk.

Bake for 15 minutes.
